How do you un-share a shared item in Bitwarden?

Think you can’t. Once the item is a member of your organization collection (even if it’s the default one), and not your personal collection item, you will not be able to unshare it.

Item has to be a member of at least one collection. If your org has only one collection that’s also called default collection you will have a problem.

Would suggest to have another collection in your org to avoid these kind of situations.

Indeed. You would need to delete it from the org and then recreate it in your personal vault to recapture control.
