Adding another drive to my SHR-setup in my DS918+ takes forever, as documented in many other threads. Is this "checking parity consistency" related to how much data I have on my drives in my setup already? Would this process go faster if I had less data on my drives?

There are 3 cycles of parity checking (3 partitions) so don't worry if the percentage complete falls back (it's probably jumped partitions).

3 cycles? If it keep taking this much time I probably have to wait a week for this to finish (going from 2x6TB to 3x6TB). :(

As Rusty said, it covers everything. But the OS and swap partitions are relatively small, and take far less time.

You can speed it up with this change (revert when finished)
