What with having to talk to family via video conference so much right now, is there a program that would host the video conference on my NAS? I know that there are plenty of free solutions out there already, but I'm looking for something that is hosted on my owner network instead of zoom's or skype's servers.

I see that Synology Chat allows the use of Jitsi to host video conferences. Does this mean that the jitsi meeting is hosted on my NAS without any connection to the jitsi servers? Or, if I launch a jitsi meeting via Synology Chat, is the actual video meeting still being hosted by jitsi's servers?

I know that I'd obviously have to have a strong internet connection to make this work, I'm just curious what's available.

Well if you wanna host a video conference one would thing you wanna maintain your video conference setup. If you use SC it will utilize Jitsi. Is that Jitsi hosted on Jitsi side, on Syno side or somewhere else? With RC you can connect it to any Jitsi, including the one that you can host on your own.
